Eight years ago Christopher and Jayne made the move to a simple off-the-grid home nestled in the box ironbark forest near Talbot.

While the move may have been a vast change from their Melbourne suburban home and lifestyle travelling regional Australia and overseas for their photography careers, they both felt right at home in the Central Goldfields.

For Jayne this sense of belonging may be due to fond memories of summer holidays visiting her grandmother who lived in Maryborough – in fact her grandfather was once the local Mayor.

Christopher saw the move as an opportunity for a career change. Always keen to learn new skills and with a passion for cooking, he undertook a commercial cookery apprenticeship at Daylesford,

before moving on to cook at the Avoca Hotel and then becoming a freelance consultant chef.

At this time the couple become aware of an open “expression of interest” to take on the nearby London House café in Talbot, and they jumped at the opportunity.

Today, almost five years on, Christopher and Jayne reflect on the vision they had for the Talbot Provedore and Eatery and what they have learnt along the way.

"Our vision was always to provide a relaxed and inviting eatery which showcased local produce, regional wines and offered visitors a taste of the region,” Jayne said.

“Since opening we have never waivered from this vision, in fact our partnerships with local producers have only grown stronger over time, making this focus as sharp today as ever before.”

Walking through the doors of the Talbot Provedore and Eatery, you’ll always be welcomed with a friendly greeting, whether you’re a local being addressed by first name, a prospector camping in the nearby bush seeking a great coffee and hearty meal, or a traveller exploring the region.

The Talbot Provedore has become a meeting spot for locals, a place for couples to enjoy a quiet dinner for two, and a family gathering venue where people can celebrate a special occasion.

And while a visit to the Talbot Provedore may be led by the menu, food quickly gives way to the experience.
